2 cups watermelon, cut into 1/4-inch cubes
1 large tomato, seeds removed and small diced
1/2 medium red onion, finely diced
1/2 cucumber, peeled, seeded and small diced
1 jalapeño, seeds removed and finely diced
2 Tbs fresh mint leaves, finely chopped
2 Tbs fresh cilantro, finely chopped
1 Tbs Brookshire’s Honey
1 lime, juice and zest

- Combine all ingredients in a large bowl. Chill for 1 hour. Stir; strain before serving to remove excess liquid.
