Sweet Potato Fries

Ingredients
2 large sweet potatoes
oil, for frying
1/2 tsp salt
1/4 tsp sweet paprika
1/8 tsp chile powder
1/8 tsp garlic powder
1/4 cup creamy hot honey sauce (recipe in instructions)
Directions
- Peel and slice sweet potatoes into 1/4-inch to 1/2-inch sticks. Add oil to large stockpot, and heat to 300° F. Use enough oil for the fries to be completely submerged. Add potatoes, and cook until they begin to brown. Transfer to a baking sheet lined with paper towels. Raise the oil temperature to 350° F. Add the fries back into the oil in small batches until golden-brown (about 1 to 2 minutes). Transfer to a baking sheet lined with clean paper towels. Combine the salt and other seasonings in a small bowl. Sprinkle over the fries while they are still hot. Serve with Creamy Hot Honey Sauce.
Creamy Hot Honey Sauce
Total Time: 5 minutes, plus cooling
Serves: 8
- 1/2 cup honey
- 2 Tbs Tabasco® Sriracha Sauce
- 2 Tbs apple cider vinegar
- 1/2 cup mayonnaise
Combine honey, Sriracha sauce and vinegar in a saucepan. Bring to a simmer, and cook for 1 minute. Let cool completely, and then combine with mayonnaise.
