2 slices bacon
1 (2 1/2 lbs) butternut squash, peeled and cut into 1-inch cubes (about 5 cups)
2 Tbs honey
1 Tbs molasses
1 Tbs olive oil
1/2 tsp smoked paprika
1/2 tsp smoked salt
1/4 tsp black pepper
Directions
- In a skillet, cook bacon, reserving the fat. Chop bacon into small pieces; set aside. Preheat oven to 375° F. Line large baking sheet with foil. Place squash in large bowl. Add bacon grease, honey, molasses, olive oil, paprika, salt and pepper. Toss to thoroughly coat. Spread squash onto baking sheet in single layer. Bake for 40 minutes until fork-tender and caramelized.
- To serve, add squash to serving dish, making sure any liquid still left on foil is added. Sprinkle chopped bacon over squash before serving.
