Ingredients
2 Cornish hens
2 Tbs vegetable oil
1 Tbs fresh thyme leaves, finely chopped
1 Tbs fresh rosemary leaves, finely chopped
1 Tbs fresh sage leaves, finely chopped
1 tsp salt
1/2 tsp black pepper
1/3 cup fig preserves
1 Tbs honey
1 Tbs balsamic vinegar
1 Tbs lemon juice
8 fresh figs, halved
Directions
  1. Preheat oven to 350° F. Spray a roasting pan with nonstick cooking spray. Place hens in the roasting pan. Combine the oil, thyme, rosemary, sage, salt and pepper in a small bowl. Rub the mixture over the top and sides of the hens. Let the hens come to room temperature for 30 minutes.
  2. In a saucepan, combine the fig preserves, honey, vinegar and lemon juice. Bring to a boil, and simmer for 5 minutes. Remove from heat, and let cool.
  3. Place hens in the oven, and roast for 30 minutes. Remove hens, and baste with fig sauce. Add fresh figs to the roasting pan. Increase oven temperature to 375° F. Roast hens for 30 more minutes or until juices run clear and internal temperature of meat reaches 165° F. Baste the hens one more time after removing them from the oven.
