Pork Chops with Wild Berry-Herb Sauce

Ingredients
2 bone-in Duroc pork chops
1 Tbs steak seasoning
1 cup dry red wine
1 (6 oz) container blackberries
1/2 cup blueberries
1 sprig fresh rosemary
3 sprigs fresh thyme
3 large sage leaves, torn
1 cup beef stock
2 Tbs butter
1/4 tsp salt
1/4 tsp black pepper
1 Tbs maple syrup
2 Tbs vegetable oil
Directions
- Season the pork chops and set aside. To make the sauce add wine and berries to a saucepan and bring to a boil. (Reserve some of the berries for garnish.) Cook until wine is reduced by half.
- Add the herbs and the beef stock and continue to cook and reduce for 10 to 15 minutes or until sauce thickens and coats the back of a spoon.
- Strain out the herbs and berries. Return sauce to the pan over low heat and whisk in the butter. Add the salt, pepper and maple syrup. Set aside until ready to serve.
- Heat a grill pan over high heat. Cook the pork chops for 4 to 5 minutes per side or until golden brown. Drizzle some sauce on the plate and over the chops. Garnish with additional blackberries and herbs.
