Lime Chicken Tacos with Avocado Sour Cream

4 boneless, skinless chicken thighs or 2 large chicken breasts
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
2 large limes, juice and zest
2 Tbs vegetable oil
1/2 cup chicken broth
1 avocado, mashed
1 cup sour cream
2 Tbs heavy cream
1/4 cup cotija cheese, crumbled
For serving: sliced avocado, lime wedges, flour tortillas, chopped tomatoes or pico del gallo
Directions
- Place chicken on a plate. In a small bowl combine the salt, pepper and chile powder. Season the chicken on both sides. Squeeze the juice of 1 lime over both sides of the chicken. Marinate for 30 minutes.
- Preheat oven to 350 degrees. In a skillet over high heat, add the oil. Sear the chicken for about two minutes on each side until golden. Squeeze another 1/2 of a lime over the chicken. Add the broth to the bottom of the skillet. Sprinkle the chicken with 1/2 of the zest. Place in the oven until chicken is cooked through.
- To make the sauce, mash the avocado in a bowl. Add the juice from 1/2 a lime, sour cream and heavy cream. Stir to combine. Taste for balance, add salt or more lime juice, if necessary. Top with some of the zest.
- Remove chicken from the oven and slice. To serve, top with remaining zest and the cotija cheese. Serve with sauce, lime wedges, avocado slices, tortillas, chopped tomatoes and lime wedges.
