Ingredients
SALSA: 1 orange, peeled, sectioned and chopped
1 grapefruit, peeled, sectioned and chopped
1 cup fresh pineapple, chopped
1 Roma tomato, seeded and chopped
1 jalapeƱo pepper, seeded and finely chopped
2 Tbs red onion, thinly sliced
1 Tbs cilantro, snipped
FISH: vegetable oil
coarse sea salt and cracked black pepper
4 Full Circle Frozen Mahi-Mahi Fillets
Directions
  1. Place all salsa ingredients in a bowl; stir to combine. Refrigerate until ready to serve. Heat grill to high. Clean grates very well with a wire brush. Lightly oil grates with cooking spray, or dip a paper towel in vegetable oil and use tongs to rub the towel over grates.
  2. Lightly oil and season the fish. When grill is very hot, add fish. Reduce heat to medium. Let sear for 3 to 4 minutes per side, or until fish naturally releases from grill grates. If fish is sticking, give it another 30 seconds before attempting to turn. It may not be ready to release. Grill the fish to to desired doneness. (Mahi-Mahi is best served medium-well.) Garnish with citrus salsa.
