Greek Crustless Quiche

6 eggs
1 cup milk
1 tsp dried oregano
1/2 tsp salt
1/2 tsp ground black pepper
1 cup fresh spinach, chopped
1/2 cup black olives, chopped
1/2 cup feta cheese
1/4 cup julienned sun-dried tomatoes (packed in oil)
2 Tbs vegetable oil
Directions
- Preheat oven to 350° F. In large bowl, whisk together eggs, milk, oregano, salt and pepper. Stir in the spinach, olives, feta and sun-dried tomatoes. Add oil to 9-inch pie plate. Rub oil across bottom and sides of dish to coat well. Pour in the egg mixture. Bake for 40 minutes, or until the middle of quiche is set. Let stand for 15 minutes before serving.
