Ingredients
1 frozen pound cake
1/2 cup grape jelly
1 cup powdered sugar
1/4 cup cocoa powder
4 to 5 Tbs water
1 (5 oz) bag unsweetened shredded coconut
Directions
- Cut the pound cake in half, lengthwise. Evenly spread the jelly on one-half of the pound cake, and top it with the other half. Cut the cake into 1 1/2-inch cubed pieces. Combine the powdered sugar, cocoa powder and water in a bowl. Stir to combine. The consistency should be thick, but slightly runny. Add another tablespoon of water or powdered sugar to thin or thicken it.
- Spread the coconut on a plate. Dip the cake cubes into the chocolate mixture, and then roll in the coconut. Set on a baking sheet lined with wax paper, and allow the coating to harden or dry.
