Easter Pastel Chocolate-Dipped Strawberries

32 medium strawberries
6 cups white chocolate chips
2 tsp vegetable oil
gel food coloring
assorted sprinkles, for decoration
Directions
- Line a rimmed baking sheet with parchment paper.
- Top with a cooling rack.
- Wash strawberries, and pat dry.
- Any water still clinging to them will make the chocolate seize.
- Place chocolate in microwave-safe bowl.
- Microwave in 20-second intervals (stirring each time) until smooth and melted.
- To make the chocolate easier to handle, stir in a little vegetable oil once melted.
- Spoon chocolate into narrow glasses. Tint with food coloring.
- Dip the strawberries, and place on the rack.
- Decorate immediately, or wait until chocolate sets to drizzle with more chocolate.
- For drizzles, place melted chocolate in sealable plastic bags with a corner cut off.
- Drizzle onto strawberries as desired.
- Refrigerate strawberries until ready to serve.
