Ingredients
1/4 cup sugar
1 cup favorite wine, divided
1/4 cup unflavored gelatin powder
1/2 cup fruit juice (pomegranate, white grape, cranberry-peach)
Directions
- Combine sugar and 1/4 cup wine in a small saucepan over medium heat. Stir constantly until sugar dissolves, without letting the mixture boil.
- In the meantime, slowly pour the gelatin over the remaining wine and fruit juice in a 2-cup measuring cup, stirring as you pour. Allow the gelatin to completely puff up.
- Once sugar is dissolved, pour the gelatin mixture into the saucepan. Stir well. Bring to a low simmer until combined (about 1 minute), stirring constantly. Do not let it boil. If any foam forms while stirring, skim it off, and discard. Pour the mixture into a small glass measuring cup. Place molds on a baking sheet. Slowly fill each section with the mixture until just below the top edge. Refrigerate until the mixture sets, about 20 minutes. Store at room temperature in an airtight container for up to 5 days.
