Ingredients
3 slices bacon, diced
3 Tbs vegetable oil, divided
1 cup bell pepper, diced
1/2 cup red onion, diced
1 (20 oz) pkg Simply Potatoes® Shredded Hash Browns
1 (12 oz) pkg frozen black-eyed peas, thawed and rinsed (approx. 2 1/2 cups)
1 tsp Cajun seasoning
1/2 tsp salt
1/2 tsp black pepper
1 Tbs fresh parsley, minced
Directions
- In a large skillet over medium heat, add the bacon and 1 tablespoon of oil. Stir in the bell pepper and onion. Cook for about 5 minutes or until bacon is crispy and vegetables are soft. Remove from pan, and set aside. Do not wipe out the pan. Add 1 tablespoon of oil and hash browns. Spread in an even layer, and press down lightly with a spatula. Cook for 6 to 7 minutes or until golden-brown on the bottom. Drizzle with remaining oil, and turn the potatoes. Cook for 6 to 8 minutes or until golden and cooked through.
- Add the bacon, vegetables and black-eyed peas to the skillet. Stir to combine, and add the seasonings. Cook for 5 more minutes, while stirring, to heat through. Remove from heat, and stir in the parsley.
