Ingredients
12 oz whole-wheat or gluten-free macaroni
1 (12 oz) can fat-free evaporated milk
8 oz fat-free cream cheese
2 cups (8 oz) reduced-fat sharp cheddar, grated
1 tsp yellow mustard
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp sweet paprika
1/3 cup Progresso™ Bread Crumbs
2 Tbs parmesan cheese, grated
1 Tbs extra virgin olive oil
Directions
  1. Preheat oven to 375° F. Spray a 9 x 13 baking dish with nonstick spray. Bring a large pot of water to a boil. Add macaroni. Cook according to package directions. Drain macaroni, reserving 1/2 cup water. Add back to the pot. 
  2. In a saucepan over medium heat, bring evaporated milk to a simmer. Cut the cream cheese into several large chunks. Slowly add to the milk, stirring until each piece is completely melted. Add cheddar, 1/2 cup at a time, stirring until melted before adding more cheese. Turn off the heat. Stir in the mustard, salt, pepper and paprika. 
  3. Pour cheese sauce over macaroni. Stir to completely coat. Add to baking dish. Cook for 15 minutes. In a small bowl, combine breadcrumbs, parmesan and oil. Remove dish from oven. Scatter breadcrumb mixture over the top. Bake for 10 more minutes or until the top is golden.
