Ingredients
12 oz whole-wheat or gluten-free macaroni
1 (12 oz) can fat-free evaporated milk
8 oz fat-free cream cheese
2 cups (8 oz) reduced-fat sharp cheddar, grated
1 tsp yellow mustard
1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp sweet paprika
1/3 cup Progressoâ„¢ Bread Crumbs
2 Tbs parmesan cheese, grated
1 Tbs extra virgin olive oil
Directions
- Preheat oven to 375° F. Spray a 9 x 13 baking dish with nonstick spray. Bring a large pot of water to a boil. Add macaroni. Cook according to package directions. Drain macaroni, reserving 1/2 cup water. Add back to the pot.
- In a saucepan over medium heat, bring evaporated milk to a simmer. Cut the cream cheese into several large chunks. Slowly add to the milk, stirring until each piece is completely melted. Add cheddar, 1/2 cup at a time, stirring until melted before adding more cheese. Turn off the heat. Stir in the mustard, salt, pepper and paprika.
- Pour cheese sauce over macaroni. Stir to completely coat. Add to baking dish. Cook for 15 minutes. In a small bowl, combine breadcrumbs, parmesan and oil. Remove dish from oven. Scatter breadcrumb mixture over the top. Bake for 10 more minutes or until the top is golden.
