Bacon Vinaigrette

Ingredients
4 slices bacon, uncooked
2 Tbs reserved bacon grease
1/4 cup red wine vinegar
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper
1/2 cup extra virgin olive oil
Directions
- In a skillet, cook bacon over medium heat on both sides until crispy. Transfer bacon to a paper towel-lined plate to cool. Pour bacon grease from pan into salad dressing bottle or sealable jar.
- Chop two bacon slices into small pieces. (Save remaining two slices for salad or to eat later.) Add chopped bacon to jar, along with vinegar, mustard, salt, pepper and olive oil. Shake vigorously to combine. Refrigerate until ready to serve.
