Family Central: End of the Summer Shrimp Boil

Just because school has started doesn’t mean the fun has to end. September is still summertime down here in the South!

My dad used to build a fire under a black iron pot in the backyard for our big back-to-school shrimp boil parties. He and my mom taught Sunday school for years, and this was one of the ways they enjoyed getting everyone together for food and as good Baptists say, “fellowship.”

But you don’t have to make a big production to have a delicious shrimp boil one night. In fact, if you are really in a hurry, you can pick up your shrimp steamed and ready to go at FRESH, but don’t skip on these two homemade sauces! They’re easy and add so much to the table.

Making the remoulade sauces with low-fat Greek yogurt will cut the calories in half from making the sauces with mayonnaise. You won’t miss the fat! And the thick, creamy texture of Greek yogurt has quickly become my go-to healthy substitute for mayonnaise and sour cream.

Boiled Shrimp with Red and White Remoulade Sauces
Serves 4

Ingredients:
For the white remoulade:
1 1/2 cups low-fat Greek yogurt (not fat-free)
5 Tbs chopped dill pickles
2 Tbs minced fresh garlic
4 Tbs Dijon mustard
2 Tbs capers, chopped
3 green onions, finely chopped

For the red remoulade:
1 1/2 cups low-fat Greek yogurt (not fat-free)
3 green onions, finely chopped
2 Tbs Dijon mustard
3 Tbs ketchup
2 Tbs capers, chopped
1 Tbs vinegar
1 minced fresh garlic clove
1/4 tsp cayenne pepper

For the shrimp:
36-40 medium-size fresh shrimp, shells on

Directions:
For the white remoulade, combine all ingredients. Refrigerate at least 30 minutes before serving.

For the red remoulade, combine all ingredients. Refrigerate at least 30 minutes before serving.

For the boiled shrimp, bring a large stockpot of water to a rolling boil. Add shrimp and cook through, just about 2 minutes. Drain immediately, and let cool. Peel and devein shrimp. Refrigerate immediately until ready to serve.
