There aren’t many things better than a big, ripe, juicy Texas peach. Naturally sweet and full of flavor, a peach is a great dessert or snack any time of day. In the Wellness Department, we recently made a recipe with Texas peaches, and it was so good I have to tell you about it! It’s surprisingly easy and it’s something everyone in the family can enjoy.
Peach-Vanilla Overnight Oats
Pint mason jars or 1-cup containers with airtight lids
1/3 cup coconut milk (any type of milk will work)
1/4 cup FRESH Bulk Thick-Cut Rolled Oats
1/3 cup vanilla yogurt (soy or almond yogurt will work too)
2 Tbs FRESH Bulk Chia Seeds
2Tbs Polaner All Fruit Peach Spreadable Fruit
1/2 cup FRESH Texas peaches, diced
1/2 tsp vanilla extract
Pinch of salt
In your container, place the milk, then the oats. Follow with yogurt and all other ingredients. Place lid on container and shake vigorously to mix. Place container in the refrigerator overnight or up to 3 days (this is a great make-ahead meal idea). It’s a good idea to let it sit for about 15 to 20 minutes at room temperature or microwave for about 30 seconds before eating. Enjoy!
