Well and Good: Cool Down, Minus the Calories

FRESH PeachesIt’s that time of year… when the scorching Texas heat leaves us ready for a southern summer indulgence: homemade ice cream.

When it comes to ice cream, I don’t discriminate! But I’m not the biggest fan of the extra calories that come along with it. A 1/2 cup serving of homemade ice cream can pack a heavy calorie punch… with as much as 30 grams of fat. And, let’s face it… when’s the last time you ate just 1/2 cup of ice cream?

Don’t be bummed out! FRESH has a solution for you! If you love to make your own ice cream, try this recipe:

Peach Frozen Yogurt
Serves 4-6

2 cups Greek yogurt (non-fat, low-fat or whole milk. I prefer low-fat)*
1cup fresh local peaches, peeled, chopped and pureed
1/2 cup bulk unrefined cane sugar
1/3 cup peach nectar (amaretto would be a great adult-approved substitution!)

Heat the peach puree and sugar on medium heat until sugar has melted completely. Cool for appx. 30 minutes. Add yogurt and nectar (or other liquid of choice). Mix until combined. Taste to make sure it’s sweet enough for you; if not, add more nectar. Now’s a great time to let your inner foodie have fun… experiment with add-ins like pecans, chocolate or other fruits if you’re feeling adventurous!

After it’s taste-tester approved, place mix in the bowl (or canister) of your ice cream maker and freeze according to the manufacturers instructions. You can eat it immediately, or, if you found some extra self control, you can freeze for 1-2 hours.

*If you’re allergic or intolerant to dairy, here’s a tip: use soy or almond yogurt (found in the FRESH dairy case). Line a mesh strainer with 2-3 sheets of cheesecloth. Place the strainer in a bowl. Spoon the yogurt into the cheesecloth and fold the cheesecloth to cover the yogurt. Place in the refrigerator for 4-6 hours or overnight. The excess liquid will drain off and you’ll be left with great tasting, dairy-free Greek style yogurt!
