And one of our own culinary superheroes will lead the way. Marty Gross is newish to FRESH but has been with the Brookshire’s company for almost two years. Here, he’s a Freshologist, where he gets to conquer new flavors every day – and share them with our guests.
Marty stumbled upon his favorite FRESH item at his first demo, when he was given the task of preparing a delicious cheesy appetizer for our Freshies to sample. The recipe was Captain Rodney’s Cheese Bake, and, as you may have guessed, Captain Rodney’s Sweet & Spicy Pepper Glaze was a main ingredient.
Captain Rodney’s makes authentically Caribbean cooking glazes, salsas, hot sauces and other products. All are made in small, open-pot batches with only the best ingredients, such as pure cane sugar instead of high-fructose corn syrup, and locally grown produce.
Marty was really impressed with the bold tangy flavor that resulted when he followed the Captain Rodney’s recipe below, using the sweet-and-spicy glaze. Marty says this glaze is the perfect blend of peppers and spices, giving both sweetness and heat. You can also brush it onto meat, poultry or veggies after cooking to deliver a burst of flavor, or serve it as a dipping sauce. (Other glaze flavors include tequila lime pepper and mango pepper; they would work in this recipe too!)

Captain Rodney’s Cheese Bake
1/2 cup mayonnaise
1 (8 oz) pkg cream cheese
2 cups grated cheddar cheese
2 green onions, chopped
6 Ritz crackers, crushed
8 slices bacon, cooked and crumbled
1/2 cup of any Captain Rodney’s Glaze
Mix mayonnaise, cream cheese, cheddar and onions in greased quiche pan. Top with crackers and bake at 350° F for 15 minutes. Top with bacon and Captain Rodney’s Pepper Glaze. Serve with crackers.
