We go through a lot of bananas at our house, but even so, we often end up with fruit that is a little too ripe and soft for anyone in my family to eat. (At least, not without complaining.) And there are only so many batches of banana bread and banana pancakes I can make.
So this summer I was happy to discover another use for almost-too-ripe bananas: BBQ bananas in the peel. Think of it as a banana split, minus the ice cream.
- Put whole, unpeeled bananas on grill. Cook a couple of minutes on each side. (Bananas that are just a little soft work best. You can also use those miniature bananas; they’ll just take slightly less time to grill.)
- Remove from grill and slice in half lengthwise to open up.
- Sprinkle with fresh berries, whipped cream, honey, and/or other toppings of your choice: chocolate sauce, chopped nuts, caramel sauce, or even crushed-up candy bars, M&Ms, and sprinkles.
