Texas attorney Dave Eagle couldn’t figure out why Texas – one of the largest dairy-producing states in the union – didn’t also produce some of the nation’s best cheeses. So he decided to do it himself.
After traveling around Europe to taste local and raw-milk cheeses, Dave went to Vermont to study the craft of artisan cheesemaking. Then he came back home to Texas and established his homegrown Eagle Mountain Farmhouse Cheese in Granbury.
It’s a very Texan operation: Eagle Mountain starts with fresh natural Grade A raw milk, from Brown Swiss dairy cows that graze naturally at Sandy Creek Farm in North Texas. Then Dave and his son Matt, who has also become a cheesemaker, hand-craft their organic cheeses, and offer them exclusively to a few small purveyors around the state.
